Zucchini Bread & Muffins with Protein Powder

Craving protein and veggies but want a treat? Try zucchini bread/muffins!

Zucchini sneaks in hidden vitamins, minerals, and moisture. Made with simple ingredients like eggs, flour, and cocoa powder, these low-carb, gluten-free, and sugar-free treats are perfect for breakfast, snacks, or dessert. They’re moist, delicious, and keep you feeling full for longer.

Zucchini is a versatile vegetable that adds moisture and fiber to baked goods, without adding much calories or carbs. It also helps you get more vitamins and minerals, such as vitamin A, vitamin C, potassium, and magnesium. Plus, zucchini is readily available and cheap, especially during its summer season.

To boost protein and satiety without added sugar or gluten, protein powder joins the party! For easy mixing, combine it with eggs, flour, cocoa, and pantry basics (oil, honey, vanilla). Mix wet and dry, fold in zucchini, then bake in muffin or loaf form. The result? Delicious protein-packed goodness!

  • Grab another bowl and whisk your wet dream team: eggs, oil, honey, water, and vanilla extract.

  • Combine the wet and dry ingredients, stirring until they become best friends.

  • Gently fold in the shredded zucchini – think fluffy clouds, not mushy mess.
