Starbucks has officially added the Aerocano to its permanent core menu across North America after launching on National Coffee Day (September 29).
Originally debuting as a hit beverage in South Korea earlier this year, this new Starbucks Aerocano uses barista technique – rather than new syrups or dairy – to completely transform the texture and look of a classic Iced Americano.
What Is the Aerocano?
The Aerocano combines Starbucks® Blonde Espresso and ice, which are then steam-aerated (air-whipped) by the barista.
Key Characteristics:
-
Velvety Texture: The aeration process yields a creamy, light micro-foam layer and a naturally smooth, slightly sweet finish without needing milk or creamers.
-
Cascading Visual Effect: As the whipped espresso settles through the cup, it creates a dramatic, photo-worthy cascading visual similar to a draft cold brew.
-
Core Menu Offerings: The beverage joins the core menu in two variations – the classic Aerocano and the Caramel Aerocano.

From South Korea to Global Menus
The beverage’s journey began in South Korea, where cold coffee culture is massive and the Iced Americano is a daily staple year-round. Recognizing that roughly 60% of Starbucks‘ global sales are cold beverages, leadership saw an opportunity to innovate on a core espresso drink.
The R&D Challenge: Scaling Barista Craft
Bringing a trend to thousands of locations required extensive testing by Starbucks‘ Asia Pacific research and development team.
-
Consistency at Scale: The team had to standardize the recipe so baristas at any store could execute it quickly and consistently.
-
Perfecting the Recipe: Developing the right steam time, ice ratio, and pour technique took multiple iterations to ensure the signature visual cascade and smooth espresso profile remained consistent from the first sip to the last.
Visual Appeal Meets Barista Artistry
Beyond its taste, Starbucks designed the Aerocano with “show-stopping visual power” to turn heads and encourage social sharing. By relying on green apron partner technique rather than artificial additives, the drink highlights coffee craftsmanship while offering customers a novel sensory experience on a familiar favorite.
