How do you make oatmeal banana bread?

 

Preparation and cooking time: 40 minutes
Ingredients:
  • 2 cups rolled oats– either original rolled oats or gluten free oats
  • 2 eggs
  • 4 overripe bananas
  • 6 tablespoon maple syrup– other alternatives are honey or agave nectar
  • one teaspoon baking soda
  • one cup dark chocolate chips – optional
  • 1 cup Pecan nuts – optional
Instructions:
In a high speed blender or food processor, add the ingredients and blend until smooth. Optionally, add some almond or oat milk for a more fluid consistency.
Bake the composition in a pan for 35-40 minutes, then let the bread cool in the pan completely, before slicing it up.
Store the oatmeal banana bread in the refrigerator, covered, for up to 1 week.
Alternatively, place slices of banana bread in a ziplock bag and store them in the freezer for up to 6 months.
