Do you love granola? Me, too! And it’s very popular nowadays.
Granola makes a wonderful healthy snack or breakfast (add your milk of choice or yogurt and maybe some fresh fruit). And a bonus: it’s relatively easy to make and you can keep it for a few days in the fridge!
Homemade granola is made with simple ingredients: whole grains/oats, vegetable oil (coconut or olive oil or other vegetable oil), some nuts and seeds, fresh and dried fruit, and is naturally sweetened with honey.
Once you master that basic formula, the variations are easy.
Ingredients:
•Whole grain oats / rolled oats (as basic as possible)
•Nuts and seeds (walnuts/ pecans/ pumpkin/ almonds/cashews/
peanuts/ pistachio/ sunflower seeds)
•Healthy oils (coconut/ olive oil)
•Dried fruits (for e.g. cranberries, raisins)
•Honey to taste
•Salt and spices to taste (cinnamon, ginger)
Preparation:
Preheat the oven at 300 degrees F. Spread the oats in a tray coated with a baking sheet, then the nuts (walnuts, pecans, almonds), add the coconut oil, honey, and cinnamon, and mix well together. Bake it for 30 minutes and when cool add the dehydrated fruits, then cut it.
Put it in a jar and store it in the fridge for the entire week.
Serve it with a side of 2-3 spoons of Greek yogurt, berries, or other favorite fruit toppings. Granola makes a great breakfast, snack, or light dinner.
Storage:
Jar glass storage containers to store or gift your homemade granola.
Variations:
For a citrus flavor, add some citrus zest (2 teaspoons) – orange, lemon, or lime zest.
Other toppings can include dark chocolate bites, coconut flakes, fresh fruit toppings.
Bon appetit!
